I just made a dish that I thought would be fine, but it is kind of gross. I set a pan to "low" on the stove top, put in some leftover couscous and some lentil & mung bean sprouts. To this I added some ground flax seed and a bit of soy sauce. It just does not make a good taste combination. This is the type of dish that is easy for me though - grains, bean sprouts and something extra. I always have these handy - this was just a bad combination!!
I thought it may have been tastier as a cold dish, with a light sprinkling of raw apple cider vinegar instead.
Aside from all of this, I am really worried I am not consuming enough protein. I need to find some good resources on how much protein we are supposed to consume. I just don't really trust a lot of the common government, doctor, type websites that advise you as to what your diet should be.

Honestly, I don't think you need to be too concerned about getting enough protein in your diet. I'm much more concerned about getting enough veggies and fruits into my diet, and that's already a large percentage of what I eat!
I've got a nutritional chart hanging in my kitchen that shows vegan sources of many nutrients and vitamins. Under protein it says, "Almost all foods contain some protein, even potatoes!" I try to eat some protein-rich foods each day, such as quinoa, amaranth, brown rice, beans, mushrooms, chickpeas, nuts, tofu, soymilk, rice milk, cow milk, eggs, or cheese, but when I don't I don't stress about it. I figure I'll eat some the next day, and in the meantime I'll get some protein from the veggies, grains, etc that I am eating.
Well, by what you have said, I should be fine. I eat a lot of those things pretty often. Thanks!
